Grapefruit Salad with Avocado and Cotija Recipe:

Ingredients:

2 grapefruits, peeled and segmented

1 avocado, pitted and diced

2 tablespoons crumbled cotija cheese, crumbled

2 tablespoons chopped fresh cilantro

1/4 sweet onion, diced

1 tablespoon avocado oil

Salt and pepper to taste

Instructions:

In a large bowl, combine the grapefruit segments, avocado, sweet onion, cotija cheese, and cilantro.

Drizzle with avocado oil and season with salt and pepper.

Toss gently to combine.

Serve immediately, garnished with additional fresh cilantro and crispy tortilla strips if desired.
