1 pound dry black-eyed peas

2 tablespoons extra-virgin olive oil

1 large yellow onion, diced

2 cloves garlic, minced

1/2 gallon homemade chicken stock

8 cups water

1 pound smoked ham, diced

1 (14.5 ounce) can diced tomatoes

5 pepperoncini peppers, diced

1 bay leaf

1/2 teaspoon garlic powder

1/4 teaspoon ground thyme

salt and pepper to taste


Place black-eyed peas into a large bowl and cover with several inches of clean cool water; let soak at room temperature for a minimum of 8 hours and ideally overnight. Drain and rinse; set aside.

Pour olive oil in a large stockpot pre-heated to a medium heat. Quickly add the onion; cook and stir until onion becomes translucent, about 5 minutes.

Add the garlic and pour in broth and water; bring to a boil, then reduce heat to a simmer. Stir in black-eyed peas, ham hocks, tomatoes, pepperoncini, bay leaf, garlic powder, thyme, salt, and pepper.

Ragù alla Bolognese Recipe


1.5 lb Coarsely ground grass-fed beef

1/2 lb ground pasture raised pork

1/3 lb Fresh pork pancetta cubed

1 medium yellow or white onion diced small

1 medium carrot diced small

1 celery stalk, trimmed and diced small

1/2 cup of red or white wine

8 oz Strained Marzano tomatoes

1 tbsp Tomato paste

1/2 cup of whole milk or heavy cream (optional)

Light meat or vegetable broth (or non-msg stock cubes)

4 tbsp Extra virgin olive oil

2 cloves fresh garlic minced

Sea salt

Freshly ground black pepper


In a large stainless steel soup pot melt the ground or chopped pancetta with olive oil.

Add the chopped onion, celery, and carrot to the oil and pancetta and cook over low heat, stirring constantly with a wooden spoon until softened but not browned.

Raise the heat to medium and add the ground pork and ground beef, break them up, then cook for about ten minutes, always stirring, until it sizzles and browns.

Add the wine; cook over medium heat until it has completely evaporated.

Add the tomato paste and purée.

Mix well; add the garlic and a cup of boiling stock (or water) and simmer, covered, for about 2 hours (or 3 depending on preference and type of meat), adding hot broth (or water) as needed.

Add the whole milk or heavy cream half-way through the cooking; allow to evaporate completely.

Season with salt and pepper before serving. When the sauce is ready it will have taken on a rich dark red hue, and will be thick and glossy ready to cover some fresh tagliatelle.

Serve over tagliatelle pasta and top with freshly grated parmesan cheese.

There is no better chicken stock than one made a home with love and care and starting with a whole chicken.  It is best to use an air-chilled chicken of the highest quality available.  By using an air-chilled chicken, one can avoid the chorine water that is used to cool down chicken in the USC after slaughter.  The chlorinated water can also be used to package/ preserve chicken for long storage and can be 2% of the total weight of the bird in the store.  Since you will be using the whole chicken and simmer out all of its delicious nutrients, air-chilled chicken is key.

Butchering a chicken can be a daunting task, but with the right tools and knowledge, it is a manageable and rewarding experience. If you want to learn how to butcher a chicken, here is a step-by-step guide that will walk you through the process.

Start by gathering the necessary tools: a sharp knife, a cutting board, and a poultry shears. It’s also a good idea to have a soup pot or other container nearby to collect the offal (giblets). Make sure your working surface is clean and well-lit.

To remove the legs and thighs, make a cut just above the thigh joint and separate the leg from the body. You can also cut through the joint using poultry shears. Repeat this step on the other side.

To remove the wings, cut through the joint where the wing meets the body. Repeat this step on the other side.

To remove the breast meat, make a cut just above the breastbone and use your fingers to separate the breast meat from the bone. Repeat this step on the other side.

Chicken Stock Recipe:


1-2 Whole Chickens butchered and skinned.

Washed vegetable scraps (as available)

2 tbsp apple cider vinegar

1 tbsp sea salt

4 liters clean water

2 tsp black pepper

2 tsp herbs du province

1 tbsp onion powder


Separate the desirable meat from the skin, cartilage, and bones.

Place the offal, skin, cartilage, and bones into a large pot and cover them with a small amount of apple cider vinegar and sea salt.  The vinegar and salt help release the nutrients into the stock.  Do not add the liver to the stock as it will impart a gamey flavor.

Add any available vegetable scraps but avoid strong flavors that may overpower the stock like asparagus, broccoli, or cauliflower.

Bring heat to medium and let the chicken pieces start to brown.

Ad desired spices, black pepper, herbs du province, and onion power are a great base.

Fill the pot three quarters full of clean water and cover with a lid.

Bring the contents of the pot to a simmer and simmer on a low hear for minimum 3 hours.

Let the stock cool enough to handle.

Strain the solids out of the stock and toss them away.

Store any extras chicken stock on glass jars in the refrigerator.

2 tablespoons olive oil, divided in half

½ cup yellow onion, finely diced

2 cloves garlic, minced

½ cup toasted breadcrumbs

¼ cup Parmesan Reggiano cheese, grated from a wedge

1 large egg, whisked

1/3 cup whole milk

1 teaspoon sea salt

¼ teaspoon oregano

¼ teaspoon ground allspice

¼ teaspoon ground nutmeg

¼ teaspoon pepper

¾ lb. ground grass-fed beef, 80% lean

½ lb. ground pasture raised pork


Heat ½ of the olive oil in a large, high-walled skillet and add the finely diced onions and garlic. Soften for 5 minutes. Set aside and let cool.

In a large bowl, combine the toasted breadcrumbs, Parmesan cheese, whisked egg, milk, cooled onions/garlic, salt, oregano, allspice, nutmeg, and pepper. Gently incorporate the meat until evenly combined, but without overworking it (otherwise the meatballs will be tough instead of tender, also keeping your stirring in one direction will enhance the juiciness of the final results).

Roll into 1 ½-inch meatballs and place on a plate. (A small cookie scoop makes it easier to roll balls of uniform size.) Transfer to the fridge and let them chill for 15 minutes, or up to overnight. Cover if chilling overnight.

Heat remaining olive oil in a large skillet over medium-high heat.

Brown the meatballs in batches, leave plenty of room around each so that you can easily rotate them with a spoon to brown on all sides. Brown for about 1 minute per side. Remove and set aside. Add additional oil and/or decrease heat slightly as needed throughout cooking.

However, throughout most of history eating meat and fat from animals was mainstay for many cultures during winter months.  In subsistence living huge amounts of time are dedicated for the harvesting, processing, distributing, and preserving of food.  Some of the harsher environments on earth have such a little or no growing period throughout the year which would enable inhabitants to grow and preserve carbohydrate rich foods to sustain them through the winter months.  These cultures have been thriving for thousands of years, and liver toxicity is a non-issue.  How is toxifying one’s liver avoided?  The answer lies on consuming large quantities of fat. 

If you are contemplating the carnivore diet, you will want to do your research and to be sure to incorporate a majority of fat in your daily intake of food.  Sticking with lean muscle tissue and limiting your fat intake in the absence of carbohydrate is not a healthy diet and will likely lead to a toxic liver.  In Alaska the native peoples use seal oil rendered from the fat of a seal on almost every meal to ensure they are getting a high enough fat percentage to keep healthy. If you do not have seal oil available, fatty animal products such as butter, beef tallow, and ghee are great additions to a carnivore’s diet.  Some schools of thought have pointed out that a high fat diet with no carbohydrate can reverse fatty liver disease that was caused by either abuse of alcoholic beverages or just the standard American diet.

Fatty meats which are often avoided on most diets are exactly what a carnivore needs to stay healthy and have a balanced diet.  Meats like bacon, brisket, high fat percentage ground beef are perfect additions to a carnivore diet.  Eggs, fatty fish like salmon, and even moderate amounts of cheese and heavy cream will protect the liver from toxicity and provide ample energy to a person eating carnivore. 

One Pan Bison Bacon Cheeseburger Recipe


1 Lb. Bison or Ground Beef at least 80/20 meat to fat ratio

4-6 strips Thick Cut No Sugar Pork Bacon

4 Slices Colby Jack Cheese

4 Pasture Raised Eggs

1 tsp Sea Salt


Form four bison burger patties, sprinkle them with sea salt, and set aside.

Place the bacon strips on a cold cast iron skillet.

Turn up to medium high heat until the bacon gets shocked, and the fat starts to render out.

Turn the heat doe to medium low and turn the bacon regularly until cooked and is at your desired crispiness.

Remove cooked bacon from the pan and pour the majority of the rendered bacon fat out into a heat safe dish.

Turn heat up to medium high and place the burger patties into the pan.

Cook the burger patties for 5-10 minutes flipping occasionally.

3 minutes before patties are medium rare or well done per preference, place cheese slices on top of each patty.

Cover the pan and cook the burger patties until cheese is melted.

Remove the burger patties and clean the pan quickly to remove debris.

Heat cast iron pan to medium high temp, add bacon grease and wait grease it hot.

Crack each egg into the hot greased pan being careful not to break the yolks.

Fry the egg until the whites are congealed and the eggs can be easily flipped with a spatula.

Flip the eggs being careful not to break the yolk.

Once flipped, cook for ~30 seconds more until eggs are perfectly over easy.

Top the cheeseburgers with the cooked bacon and then place an egg on top of each.

Serve immediately.

1-3 Fresh Organic Pasture Raised Chicken Livers

1/2 Cup Masa Harina

3 Tbsp Avocado Oil or Bacon Fat

1/4 tsp Onion Salt

1/4 tsp Garlic Powder

1/4 tsp Black Pepper


Remove vasculature from the livers, cutting the fleshy parts of the lobes into small thin strips. Don’t feel they need to be uniform or be afraid to leave lots of rough edges.

Combine masa harina and spices and place on a plate or wide bowl.

Bring a skillet to medium high heat and then add avocado oil or bacon fat.

Wait until the oil is hot but not smoking, then quickly chicken liver pieces into masa harina and spice blend until completely covered.

Immediately add the breaded livers strips to the hot skillet.

The liver may pop in the oil so be careful and cover with a breathable wire screen if available.

Cook until golden brown and flip to the other side. Approximately 3-5 minutes.

Flip again and cook another 2 minutes or so until a darker brown crust forms on each side.

Remove from heat and serve immediately.

2 Large Bone-In Pastured Pork Chops

1 Tbsp. Apple Cider Vinegar

3 Tbsp Sea Salt 1 Bay Dried Leaf

½ tsp. Cinnamon Powder

1/2 tsp. Ground Szechwan Peppercorns

1 tsp. Soy Sauce

2 Cloves Garlic, minced

1 Small Piece Fresh Ginger, minced

2 Tbsp. Honey


  1. In a small bowl, mix together the apple cider vinegar, salt, bay leaf, cinnamon, Szechwan peppercorns, soy sauce, garlic, and ginger to create a marinade.
  2. Place the pork chops in a shallow dish and pour the marinade over the top. Marinate the pork chops in the refrigerator for at least 30 minutes, or up to 8 hours.
  3. Preheat your grill to medium-high heat.
  4. Remove the pork chops from the marinade and discard the excess marinade. Grill the pork chops for 5-7 minutes on each side, or until they are cooked through and reach an internal temperature of 145°F.
  5. In a small saucepan, heat the honey over medium heat until it becomes thin and easy to brush onto the pork chops.
